Grapes variety:
70% Cabernet Sauvignon, 30% Raboso, vineyard age about 8 years old.
Grape-harvest period:
End of September with the grape harvest in cases.
Winemaking process:
Delicate removal of the stalks and pressing, immediate separation of the must from the marc, refinement
by means of enzymes and activation of fermentation with selected yeast at a controlled temperature
between 15-18°C.
Aging/Refining:
Fermentation in stainless steel containers at a low temperature. After the sparkling process is over, wine
rests for 7 days in sediment. Refined for 2 months in bottles. Manolactic fermentation is not carried out.
Sparkling process:
Charmat Method.
Colour:
Bright pink.
Aroma:
Pleasant and delicate with hues of fresh fruit.
Taste:
Fresh, soft, aromatic with a good persistence.
Alcoholic content:
12%.
Serving temperature:
10°C.
Food suggestions:
Matches fish, risotto, soft cheese, ideal as an aperitif.
