Grapes variety:
Glera (Prosecco) 100%.
Cultivation system, “a Cappuccina”, or arched cane; 10-year-old vineyard.
Grape-harvest period:
First day of September, through a grape-harvest in crates.
Winemaking process:
It is carried out with a soft destemming/crushing process, defecation through enzymes and cryomaceration
at controlled temperature of 10-15°C for 12-15 hours.
Aging/Refining:
Fermentation in stainless steel containers at law temperature. After the ending of the sparkling process,
the wine has to rest for 90 days in the fine lees. Then there is a two-month refining process in bottle.
Malolactic fermentation not carried out.
Sparkling process:
Charmat Method.
Colour:
Straw yellow.
Aroma:
It is pleasant and delicate, it reminds of jasmine.
Taste:
It is dry and soft.
Alcoholic content:
12%.

8 °C.
