Grapes variety:
Colli Euganei Cabernet.
Cultivation system, “a cordone speronato”, or rammed horizontal cord, with a field density of 3800 plants
per hectare; it faces south with a production of 2 kilos per plant. The vineyard is about 15-years-ord.
Grape-harvest period:
End of October, the grapes have a light over-ripeness. The grape-harvest is carried on with 6kg wooden crates.
Winemaking process:
One part of the fermentation takes place in cement silos and one part in wood casks with controlled
temperature. Very long maceration and malolactic fermentation completed.
Aging/Refining:
50% in big wood casks and the rest in barrels of second passage, for a period of 12 months. Then there
is the refining process in bottle of at least eight months.
Colour:
Very deep ruby red with garnet nuances.
Aroma:
The wisely dosed aging in barrels provided this wine with a unique elegance. The tobacco, bitter chocolate
and toasted flavours involve with elegance the feelings of peppers and spices coming from far lands,
where one can make pleasant trips with one's mind.
Taste:
It has surely merited an award at the International Wine Challenge Competition.
The equilibrium and the full-bodyness, together with the enthusiasm of the bitter chocolate note,
harmoniously blend together with a very respectful tannic sensation.

13%.

18 °C.

This wine is delicious with roasts and grilled red meats. It is also appreciated with farm feathered game
and mature cheeses.
