Grapes variety:
Colli Euganei Merlot.
Cultivation system, “a Cappuccina”, or arched cane, with a field density of 4000 plants per hectare; it
faces south with a production of 2 kilos per plant. The vineyard is about 15-years-ord.
Grape-harvest period:
Middle of October, the grapes are partially dried; control of hydric stress. The grape-harvest is carried
on with 6kg wood crates each.
Winemaking process:
The peculiarity of this wine is the very long maceration at controlled temperature: the main part is carried
out in wood containers. Malolactic fermentation completed.
Aging/Refining:
50% in big wood casks and the rest in barrels of second passage, for a period of 12 months. Then there
is the refining process in bottle of at least eight months.
Colour:
Very deep ruby red with garnet nuances.
Aroma:
The cherry and toasted flavours give a sensation of pleasant equilibrium. The cinnamon, the liquorice
and the underwood nuances grant it elegant and particular characteristics.
Taste:
The harmonic note comes back in an impetuous way; the taste is full, generous, long of noble sensations,
important in terms of structure and volume.
Alcoholic content:
13%.

This wine is the ideal setting for red meats-based plates, game and tasty grilled meat.
