Grapes variety:
Colli Euganei Merlot.
“Cappuccina” plant breeding method with 4000 vines per hectare, exposed to the South with a
production of 2 kg per vine. Vineyard age 18 years old.
Grape-harvest period:
End of September with a double thinning out of bunches, collection of grapes in cases.
Winemaking process:
In stainless steel containers with frequent délestage (rack and return) and controlled fermentation. Long
maceration, malolactic maceration completed.
Aging/Refining:
in partially French durmast barrels of 32 hl for 8 months. Refined for at least 6 months in bottles.
Colour:
very strong red ruby.
Aroma:
Characteristic slightly herbaceous notes, very ripe cherry and blueberry that perfectly match wooden
aroma.
Taste:
The first sensation is harmony, pleasantly tannic, balanced and persistent; the pleasant scent of forest
fruits with prevalence of blueberries brings the image of the stealthy shadow of the fox running along
the sweet scope of our hills.
Alcoholic content:
13%.
Serving temperature:
18 °C.
Food suggestions:
Suitable for white and red meat, roast meat and mid-seasoned cheese.
