Grapes variety:
Colli Euganei Cabernet.
Cultivation system, “a Cappuccina”, or arched cane, with a field density of 3800 plants per hectare; it
faces south with a production of 2 kilos per plant. The vineyard is about 15-years-ord.
Grape-harvest period:
End of October, the grapes have a light over-ripeness. The grape-harvest is carried on with 6kg wooden
crates.
Winemaking process:
The fermentation takes place in two places, in small capacity cement silos and in wood wine casks, with
the "controlled temperature" technique. The maceration lasts until the sugars last. Malolactic fermentation
completed.
Aging/Refining:
In 32hl-capacity wood wine casks for a period of 8 months. Then there is a period of at least 6 months
for the refining process in bottle.
Colour:
Deep ruby red with purplish nuances.
Aroma:
The note of peppers and fine herbs is pleasant and measured; it is accompanied by a fine touch of blonde
tobacco and dead flowers.
Taste:
Silky, involving, dense as a moonless night, enthusiasmant, provided with a fine elegance, lightly
perceptible tannins and discrete note of big wood.
Alcoholic content:
13%.
Serving temperature:
18 °C.
Food suggestions:
It is an excellent wine for roasts and grilled red meats, to be savoured with tasty sausages. It harmonises
well also with game and mature cheeses.
