Grapes variety:
Colli Euganei Cabernet Franc.
Cultivation system, “a Cappuccina”, or arched cane, with a field density of 4000 plants per hectare; it
faces south with a production of 2 kilos per plant. The vineyard is about 15-years-ord.
Grape-harvest period:
First week of October, through a double pruning of grapes, grape-harvest in crates.
Winemaking process:
In stainless steel containers with frequent delestage and controlled fermentation. Long maceration and
malolactic fermentation completed.
Aging/Refining:
A part in oak wine cask, a part in french of a 32hl capacity and a part in barrels for a period of 8 months.
Then there is the refining process in bottle of at least eight months.
Colour:
Very deep ruby red with garnet nuances.
Aroma:
The pepper note blends in an elegant way with the toasted wood sensation, while the eucalyptus and
balsamic feelings underline its complexity.
Taste:
It is a mix of very satisfying tastes; it is a high-class wine, very well-balanced and the long note that
remains in the mouth is very pleasant.
Alcoholic content:
13%.

18 °C.

Coupling are advised with noble poultry meats, game, hard pasta cheeses and all red meat-based plates.
