Grapes variety:
Serprina.
Cultivation system, “a Cappuccina”, or arched cane; 10-year-old vineyard.
Grape-harvest period:
First days of September, through a grape-harvest in crates.
Winemaking process:
It is carried out with a soft destemming/crushing process, defecation through enzymes and cryomaceration
at controlled temperature of 10-15°C for 12-15 hours.
Aging/Refining:
The must/wine is conserved in refrigerator until the time of or bottle fermentation; this process is followed
by a two-month refining process in bottle.
Colour:
Pale and bright straw yellow.
Aroma:
Fresh and delicate, with clear fruity flavours.
Taste:
It is smooth, bright and dry; it has a good persistence on the palate.
Alcoholic content:
11,5%.
Serving temperature:
6-8 °C.
Food suggestions:
It is a perfect accompaniment for aperitifs; it harmonises well with low-fat appetizers and fish-based
dishes.
