Grapes variety:
Pinot Bianco.
Cultivation system, “a Cappuccina”, or arched cane; 10-year-old vineyard.
Grape-harvest period:
Middle of September, through a grape-harvest in crates.
Winemaking process:
It is carried out with a soft destemming/crushing process, defecation through enzymes and
cryomaceration at controlled temperature of 10-15°C for 12-15 hours.
Aging/Refining:
Fermentation in stainless steel containers at law temperature. A two-month refining process in
bottle. Malolactic fermentation not carried out.
Colour:
Deep straw yellow with greenish nuances.
Aroma:
Fine and delicate, with floral and fruity flavours, typical and characteristic note of oven-fresh
crust bread.
Taste:
It is fresh and velvety, pleasantly dry on the palate.
Alcoholic content:
12%.
Serving temperature:
10 °C.

It is a perfect accompaniment for light fish dishes with delicate sauces, dry soups and meat
broth.
