Grapes variety:
Chardonnay.
Cultivation system, “a Cappuccina”, or arched cane; 10-year-old vineyard.
Grape-harvest period:
First days of September, through a grape-harvest in crates.
Winemaking process:
It is carried out with a soft destemming/crushing process, defecation through enzymes and
cryomaceration at controlled temperature of 10-15°C for 12-15 hours.
Aging/Refining:
Fermentation in stainless steel containers at law temperature. A two-month refining process in
bottle. Malolactic fermentation not carried out.
Colour:
Straw yellow.
Aroma:
Fine and delicate, it reminds of golden apple and tuberose flowers.
Taste:
It is dry, soft and tempting, with honey, acacia and liquorice flavours.
Alcoholic content:
12%.
Serving temperature:
8-10 °C.
Food suggestions:
It is perfect served with aperitifs, suitable for lean appetisers, soups and fish or eggs-based
dishes.
